Loligo pealei squid, commonly referred to as Boston squid, are caught in in commercial quantities from Massachusetts to North Carolina. They are firm and have a delicate flavor making them a favorite of American and European connoisseurs.
Our trawler's catch loligo squid from October to May. Our total production averages from 3,000 MT - 6,000 MT each season. At the start of our season, the majority of the squid is small. As the season progresses, the size of the squid increases. The squid are graded on board into the following size grades.
Grades 0 through 4 are hand laid throughout the block. Grades 5 and 6 are jumble packed with only the top layer of squid neatly arranged. |
